Colder temps inspire warm foods

As the weather gets colder we tend to find more comfort in eating warm foods. I love to have roasted vegetables. They are so easy to make and roasted veggies go well with everything; beef, lamb, chicken, turkey, rice, quinoa, lentils or salad.

Choose your favourites, wash them well, cut off ends if needed, remove any seeds and place on a cookie sheet lined with parchment paper. Today, I cooked squash, sweet potato, beets, red onion and broccoli. I sprayed the veggies with a bit of avocado oil and sprinkled some Himalayan pink sea salt. Bake at 350 for 40 – 50 minutes or your desired tenderness. Delish! #Roastedveggies
