Holiday treats – try Paleo!
It’s the holiday season in full force and the sweet treats are all around us!
Now is a great time to try an alternative recipe; no refined or bad sugars to worry about!
Here is a great paleo recipe for a delicious chocolate dessert or snack.
Paleo Chocolate Coffee Cake
1 C coconut flour
1/3 C almond flour
15-20 pitted dates (soaked in 1 1/2 tbsp hot water)
2 C organic apple sauce
1 C organic unsweetened cocoa powder
6 organic free range brown eggs
4 tsp organic vanilla
1 C organic coconut oil
2 tsp gluten free baking soda
1 tsp sea salt
1 C strong brewed coffee
1 pkg (283g) diary, gluten, soy free semi-sweet chocolate chips
1/2 C shredded unsweetened coconut (optional)
Soak the pitted dates in about 1 1/2 tbsp of hot water to soften them for about 10 minutes. Place in food processor and blend until pureed. Add applesauce and continue to blend until all combined and smooth. Transfer to a large mixing bowl or stand mixer, add the eggs, coconut oil, vanilla, and coffee and mix on low until well combined. In separate bowl, mix all dry ingredients together. Slowly add the dry ingredients to the wet and mix together, scraping the sides of the bowl blending until a smooth batter is reached. Grease a 9×13 oblong glass pan with coconut oil, pour in the batter and evenly distribute with the back of a spatula. Bake at 350 for 30-35 minutes or until a tooth pick stuck in the middle comes out clean.
Evenly pour the package of chocolate chips over the top when out of the oven and as the chocolate melts, spread evenly with the back of a spoon to cover all. Sprinkle the shredded coconut on top, if desired.
Let cool 15 minutes before transferring to a wire rack or scoring to cut into pieces.
